Method:
- Wash and cut the potatoes with the skin into small pieces. Peel, wash and chop the onions. Wash and chop the tomatoes. Peel, wash and chop the ginger.
- Break the wadian into small pieces.
- Heat three tablespoons of oil in a pan, add cumin seeds and chopped onion and sauté.
- Heat the remaining oil in another pan, add broken wadian and roast a little. Remove and keep aside.
- Add chopped ginger to the onion in the pan and continue to sauté till light brown. Add the potato pieces, turmeric powder, coriander powder, cumin powder, red chilli powder and salt.
- Stir and add a little water.
- Add the roasted wadian, adjust water and cover and cook till the potatoes are done.
- Add chopped tomatoes and cover and cook for two to three minutes more.
