Roasted Garlic Prawns

Method:
- De-vein prawns. Wash well and drain thoroughly.
- Place prawns, garlic paste, garlic cloves, chopped green chillies, chopped coriander leaves, lemon juice in a bowl. Mix well adding salt to taste. Also add the onion, capsicum and carrot rings and allow to marinate for ten to fifteen minutes.
- Arrange two prawns, one garlic and a spoonful of vegetables on a six inch x six inch square aluminium foil. Bring the four corners of the foil to the centre and twist them to make a potli or packet. Make similar packets with remaining prawns.
- Cook on live charcoal for eight to ten minutes.
- Transfer onto a serving dish and serve garnished with lemon wedges.
- Note: You can use parsley in place of coriander leaves.
