Prawns in Coconut Milk
Ingredients:  
Green prawns 750 g medium
Oil 1 tablespoon
Onions, sliced 2
Garlic, crushed 2 cloves
Turmeric 1 teaspoon
Fresh red chillies, seeded, Chopped2
Curry leaves 8
Coconut milk 2 cups
Salt 1/2 - 1 teaspoon
Preparation time 10 minutes
Total cooking time 25 minutes
Serves 4 - 6

Method:

  • Peel and devein the prawns. Heat the oil in a medium pan. Add the onions and cook until soft. Add the garlic, chillies, turmeric and curry leaves. Stir over medium heat for 1 minute.

  • Add the coconut milk and salt. Simmer, uncovered, over low heat for 10 minutes.
  • Add the prawns and stir gently. Simmer for 12 minutes, or until the prawns are tender. Serve sprinkled with some fresh curry leaves, if desired.
