Fruity Pancakes
Ingredients:

For Pancakes
Flour 1/2 cup
Eggs 2
Milk 1/4 cup
Salt (just a pinch)
Oil to grease the pan
For filling
Butter 3 tbsps n Seasonal fruits 1 cup
Roasted nuts 1tbsp
Lemon juice 1 tbsp
Cinnamon powder 1/2 tsp
Sugar 2 tbsps
Cream 2 tbsps

Method:

  • Start by sifting flour into a bowl
  • Add eggs and milk to form a smooth paste
  • Keep the batter to rest for 30 minutes
  • Now, heat the pan and grease it well
  • Put 2 tbsps of mixture into the pan and cook on medium heat until light golden brown
  • Turn pancake and cook on the other side.
  • Repeat with remaining batter
  • The next step is to heat butter, add in the fruits, lemon juice and let it cook till the fruits become a little soft
  • Now add in sugar and sprinkle cinnamon powder.
  • Remove from heat
  • In the end add cream and mix well
  • Spread 1 heaped tbsp of the prepared filling in each pancake and roll it up
  • Garnish with roasted nuts and your pancakes are ready to be served
