Fruit trifle
Ingredients:

1 tin of mixed fruit
1-1/4 cup fresh cream
2 cup vanilla custard
4 tbsp orange juice
4 ounces apple jam
6 ounces sponge cake, cubed
Almonds, toasted and sliced
For vanilla custard
1/2 litre milk
2 tbsp custard powder
4 tbsp sugar

Method:

  • For vanilla custard, take two tablespoons of custard powder in a bowl and mix in some milk.
  • Mix sugar in the remaining milk.
  • Bring to a boil while stirring continuously.
  • Add custard mix to the milk.
  • Spread half of the cake pieces on the bottom of a serving bowl.
  • Dilute the jam with orange juice and spread the mixture evenly on cake cubes.
  • Spread a layer of mixed fruits on the cake.
  • Pour half of the custard over the fruits and cake.
  • Repeat the layers of moistened cake, jam, fruits and custard.
  • Cover and chill for at least two hours.
  • Before serving, spread whipped cream evenly on top.
  • Top with toasted, sliced almonds and mixed fruits.
