Beef Noodles Soup

Ingredients:

6 spring onions, cut into strips
8tbsp carrots, cut into strips
12 oz boneless beef cut into strips
2tbsp oil
1 garlic clove, crushed
1 inch piece ginger, peeled and finely chopped
5 cups beef stock
3tbsp Soya sauce
75g/3oz egg noodles
75g/3oz spinach, shredded
Salt and pepper to taste

Method:

  • Heat the oil in a saucepan and cook the beef until browned.
  • Add garlic, ginger, spring onions and carrots to the pan and stir-fry for three minutes.
  • Add the beef stock, Soya sauce and seasoning.
  • Bring to boil and simmer, covered for 10 minutes.
  • Break up the noodles and add to the pan along with spinach.
  • Simmer gently for five minutes or until the beef is tender.
